About me
I’m Dr Vanessa Kimbell, and my work centres on creating breads and baked goods that nourish both our bodies and the planet.
Through my BALM (Baking as Lifestyle Medicine) framework, I explore ways to reduce emissions and improve dietary diversity—collaborating closely with those who grow and mill our grains.
This includes using Botanical Blend flour, uniquely produced across all four years of crop rotation, helping to protect soil health, enhance biodiversity, and build greater resilience in our food system.
By connecting bakers, growers, researchers, and policymakers, I hope to support pathways towards achieving net zero and ensuring that nutritious, planet-friendly foods remain accessible t
